Blueberry Lemonade Concentrate

Chalk it up to apartment living or 10+ years of experience, but I’m pretty picky about what tools make it into my kitchen. I have 3 basic criteria that every kitchen tool must meet:

  1. The tool must serve a purpose, but not be so specific that it ends up being a one hit wonder I use every 6 months.
  2. It needs to make my time in the kitchen easier or more efficient. 
  3. It must be a quality product that will last for a very long time.

Why Ergo Spout?

I like to store the blueberry lemonade concentrate in mason jars, but if you’ve ever used a mason jar to store any kind of liquid, then you know it can be a pain to pour. Lemonade vs Lemon Concentrate

Lemonade is lemon juice, sugar, and water. The flavor is ultimately determined by the amount of water used; more water for a lighter lemon flavor, and less water for a more intense flavor. 

Lemon concentrate is simple syrup. Traditionally, simple syrup is equal parts sugar and water. With lemon (or any fruit flavor), we replace the water with fruit juice. So a lemon concentrate is more intense in flavor, and requires you to mix it into water before enjoying it as a lemonade drink.

Why make a concentrate when I can just make lemonade?

Great question! There are two reasons why a concentrate is more beneficial:

A concentrate is more versatile

In this case, I’m adding water and creating a refreshing beverage, but a fruit concentrate can be used in a number of other recipes:

  • Use it as a syrup on your favorite waffles or pancakes.
  • Add it to your favorite cocktail. 
  • Pour it over cake to moisten the layers.
  • Blend with ice for instant Italian ice. 

You have more control over the flavor

When you make a lemonade concentrate, you control how much or how little you use to make a drink. If you want less lemon or blueberry, then you just add less syrup. 

I actually like to separate my lemon syrup from the blueberry. That way if I don’t feel like having one of the flavors in my drink, it’s easy to leave out.   

A concentrate also comes in handy for parties and potlucks. You don’t have to worry about appeasing all possible taste buds. Just bring the concentrate ready to serve in a mason jar topped with Ergo Spout, and let your friends and family decide how they like their lemonade.

Blueberry Lemonade

Description

Fruity and refreshing blueberry lemonade made from a blueberry and a lemon simple syrup.

Ingredients

For the lemon syrup:

  • 2 cups fresh lemon juice (about 12 lemons)
  • 1 ⅔ cup granulated sugar

For the blueberry syrup:

  • 1 cup water
  • 1 cup fresh blueberries
  • ⅔ cup granulated sugar
  • ⅛ tsp coriander (optional) *See note

To make blueberry lemonade:

  • 1 oz lemon syrup
  • ½ oz blueberry syrup
  • 12 oz water
  • Ice

Instructions

For the lemon syrup:

  1. In a medium saucepan, combine the lemon juice and sugar. Bring to a simmer over medium heat.
  2. Remove from heat, and cool to room temperature. 
  3. Strain into a mason jar. Top with Ergo Spout and store in the fridge for up to 3 weeks. 

For the blueberry syrup:

  1. In a medium saucepan, combine the water, blueberries, sugar, and coriander (optional). Bring to a simmer over medium heat.
  2. Cook for 10 minutes, stirring occasionally. *See note
  3. Remove from heat, and cool to room temperature.
  4. Allow blueberries to soak in syrup in an airtight container in the fridge for up to 24 hours (*see note). You can also strain immediately into a mason jar. Top with Ergo Spout and store strained syrup in the fridge for up to 3 weeks.

To make blueberry lemonade:

  1. Fill a 12 oz glass part way with ice. Fill with water to ½ inch below the rim.
  2. Add in 1 oz lemon syrup and ½ oz blueberry syrup. Stir to combine. Taste and add more syrup if needed.

Notes

For the blueberry syrup:

  • Coriander has floral and citrus notes. You can’t taste it among the blueberry; however, it serves to enhance and brighten the flavor of the blueberries.
  • If you want the syrup to be thicker for pancakes or a dessert, cook for an additional 10-20 minutes until reaching desired thickness.
  • Leaving the blueberries to soak in the syrup for up to 24 hours will infuse more blueberry flavor into the syrup. Don’t leave them in the syrup for longer than 24 hours, or they will decrease how long the syrup will keep fresh in the fridge.

One of the things that led to burn out for me was a disconnect between quality and quantity. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

I’ve always valued quality content and taking the time (I thought) to put my best work out there. But somewhere along the way, I got caught up in creating more content to keep pace with other food photographers. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

I’ve heard so many times over this past year that posting content consistently and frequently is crucial; I let that define my success.⠀⠀⠀⠀⠀⠀⠀⠀⠀

I ended up with images that I liked but didn’t love. I saw my style starting to narrow because I knew I could produce a certain image in a short period of time. I was frustrated because I wasn’t progressing, but I wasn’t progressing because I was focused on the wrong thing!⠀⠀⠀⠀⠀⠀⠀⠀⠀

The only way for me to move forward and continue to grow in this space is to put quantity aside and focus on the quality of my content. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

I’ve been dodging burnout for the better part of 2019, but it finally caught up to me in early October in the form of a single thought - “I don’t like doing this anymore.”⠀⠀⠀⠀⠀⠀⠀⠀⠀

I was shooting a recipe and that thought left me instantly terrified. Food photography has always been my happy place; so when those feelings of disinterest snuck in, I knew I had hit the bottom of burnout. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Hi there! I'm Niki & I'm the face behind Clean Plate Clb. I'm a self-taught home cook focused on scratch made recipes using real ingredients. .
When I say scratch made, I mean it! I make my own ricotta cheese, pasta, and sauces among other things. It's easier than you think and tastes so damn good!

I fell in love with cooking in college while binge watching every cooking show the Food Network could throw at me. I'm a picky eater, so I dove into learning how to cook so I could make dishes with flavors I love. .
I live in the Philly suburbs with my husband, Zac. We have a labradoodle named Charlie, who is a complete goober, and a parrotlet named Stu. .
I hate sun showers and love street sweepers. I have an obsession with notebooks and I'm constantly getting a new one (even if the old one isn't finished..).

There was a time when I was young that I wanted to be a photographer but I pushed it aside for a more "practical path" in analytics.

Did you know that roasting cherry tomatoes at different oven temperatures can impact their flavor?⠀⠀⠀⠀⠀⠀⠀⠀⠀
.⠀⠀⠀⠀⠀⠀⠀⠀⠀
High heat (about 400 degrees +) will caramelize the tomatoes, which leads to a sweeter flavor. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Lower heat (about 300 degrees) will roast the tomatoes slowly and reduce the quick caramelization that comes from higher temperatures. This preserves more of their natural flavor and keeps them from getting overly sweet. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
.⠀⠀⠀⠀⠀⠀⠀⠀⠀
I prefer mine roasted low and slow! Then I blend the roasted cherry tomatoes with some white wine vinegar & basil to make a creamy vinaigrette. It's packed with fresh flavors and super versatile! Great on salads, sandwiches, and pasta!⠀⠀⠀⠀⠀⠀⠀⠀⠀
