Lemonade vs Lemon Concentrate
Lemonade is lemon juice, sugar, and water. The flavor is ultimately determined by the amount of water used; more water for a lighter lemon flavor, and less water for a more intense flavor.
Lemon concentrate is simple syrup. Traditionally, simple syrup is equal parts sugar and water. With lemon (or any fruit flavor), we replace the water with fruit juice. So a lemon concentrate is more intense in flavor, and requires you to mix it into water before enjoying it as a lemonade drink.

Why make a concentrate when I can just make lemonade?
Great question! There are two reasons why a concentrate is more beneficial:
A concentrate is more versatile
In this case, I’m adding water and creating a refreshing beverage, but a fruit concentrate can be used in a number of other recipes:
- Use it as a syrup on your favorite waffles or pancakes.
- Add it to your favorite cocktail.
- Pour it over cake to moisten the layers.
- Blend with ice for instant Italian ice.
You have more control over the flavor
When you make a lemonade concentrate, you control how much or how little you use to make a drink. If you want less lemon or blueberry, then you just add less syrup.
I actually like to separate my lemon syrup from the blueberry. That way if I don’t feel like having one of the flavors in my drink, it’s easy to leave out.
A concentrate also comes in handy for parties and potlucks. You don’t have to worry about appeasing all possible taste buds. Just bring the concentrate ready to serve in a mason jar topped with Ergo Spout, and let your friends and family decide how they like their lemonade.

Blueberry Lemonade
- Prep Time: 10 minutes

Description
Fruity and refreshing blueberry lemonade made from a blueberry and a lemon simple syrup.
Ingredients
For the lemon syrup:
- 2 cups fresh lemon juice (about 12 lemons)
- 1 ⅔ cup granulated sugar
For the blueberry syrup:
- 1 cup water
- 1 cup fresh blueberries
- ⅔ cup granulated sugar
- ⅛ tsp coriander (optional) *See note
To make blueberry lemonade:
- 1 oz lemon syrup
- ½ oz blueberry syrup
- 12 oz water
- Ice
Instructions
For the lemon syrup:
- In a medium saucepan, combine the lemon juice and sugar. Bring to a simmer over medium heat.
- Remove from heat, and cool to room temperature.
- Strain into a mason jar. Top with Ergo Spout and store in the fridge for up to 3 weeks.
For the blueberry syrup:
- In a medium saucepan, combine the water, blueberries, sugar, and coriander (optional). Bring to a simmer over medium heat.
- Cook for 10 minutes, stirring occasionally. *See note
- Remove from heat, and cool to room temperature.
- Allow blueberries to soak in syrup in an airtight container in the fridge for up to 24 hours (*see note). You can also strain immediately into a mason jar. Top with Ergo Spout and store strained syrup in the fridge for up to 3 weeks.
To make blueberry lemonade:
- Fill a 12 oz glass part way with ice. Fill with water to ½ inch below the rim.
- Add in 1 oz lemon syrup and ½ oz blueberry syrup. Stir to combine. Taste and add more syrup if needed.
Notes
For the blueberry syrup:
- Coriander has floral and citrus notes. You can’t taste it among the blueberry; however, it serves to enhance and brighten the flavor of the blueberries.
- If you want the syrup to be thicker for pancakes or a dessert, cook for an additional 10-20 minutes until reaching desired thickness.
- Leaving the blueberries to soak in the syrup for up to 24 hours will infuse more blueberry flavor into the syrup. Don’t leave them in the syrup for longer than 24 hours, or they will decrease how long the syrup will keep fresh in the fridge.
